内容提要：

According to The Fortune Cookie Chronicles, there are more Chinese restaurants in the U.S. than McDonalds, Burger King, Pizza Hut, Taco Bell and Kentucky Fried Chicken combined (over 41,000). Cuisine has been a defining element of the Chinese and their culture, and it definitely played a major role in the formation of Chinese identity in the Chinese immigration history. This presentation offers an interpretation of Ian Cheney’s award winning documentary, The Search for General Tso (2015), and explores the ways that Chinese adaptation to the environments of American culture provides a vehicle for Chinese integration into American culture. It argues how food has helped construct, negotiate, and consolidate the Chinese identity especially for the early Chinese immigrants in the U.S.
